Pesto

  • 50 grams pine nuts
  • 3 garlic cloves
  • 50 grams fresh basil
  • 35 grams parmesan cheese, grated
  • Drizzle of oil
  • Salt, to taste
  • Pepper, to taste

  • 200 grams macaroni
  • Water, for boiling

Béchamel Cheese Sauce

  • 50 grams butter
  • 50 grams flour
  • 475 ml milk
  • Parmesan cheese, for topping
  • Salt, to taste

Method

  • Step 1

    Blitz the pine nuts, garlic, basil, oil, Parmesan and seasonings until a thick paste forms.

  • Step 2

    Boil the macaroni for 5-6 minutes or according to packet instructions. Drain and set aside.

  • Step 3

    Meanwhile prepare the bechamel by melting butter over a medium heat and stirring through plain flour. Pour the milk and whisk continuously on a low heat until a thick consistency forms. Add extra Parmesan and seasonings.

  • Step 4

    Mix in the pesto and pasta until well combined and serve warm.
