If you grew up on fish fingers, this simple recipe is for you. Strips of cod are coated in a mixture of flour, egg, breadcrumbs, and spices before they are baked.
Serve them with mayonnaise and a squeeze of lemon!

ingredients
- 2 cod fillets
- 1 cup golden breadcrumbs
- 1/2 teaspoon smokey paprika
- 1/2 teaspoon dried oregano
- Salt and pepper
- 1 egg
- 3 tablespoons flour
- 3 tablespoons mayonnaise
Method
Step 1
Preheat the oven to 350 degrees. Prepare the breadcrumb mixture by combining the breadcrumbs, paprika, oregano and salt and pepper.
Step 2
Prepare the batter by whisking together the egg, flour, mayonnaise and salt and pepper to taste.
Step 3
Slice the cod fillets in the middle length way (in half). Then slice each half vertically so that you have 4 pieces from each cod fillet (in total 8).
Step 4
Coat each filler in the batter, then the breadcrumb, making sure to cover the fillets fully.
Step 5
Lay them on a pre lined baking tray and bake for 20-22 minutes until golden and the fish has been cooked through.
