A Note from Feedfeed

Crispy Chicken Parmesan is our new favorite way to enjoy chicken. Gluten free breadcrumbs are mixed with herbs and spices, and parmesan cheese. Serve alongside pasta or on top of salad for a complete meal.

ingredients

  • 6 chicken breasts, tenderised 1-2 eggs, whisked
  • 35 millileters milk
  • 2 tablespoons mixed Italian herbs (I used the waitrose blend and added dried rosemary)
  • 1/2 tablespoon cayenne pepper
  • 60 grams grated Parmesan
  • Salt and pepper to taste
  • 150 grams gluten free breadcrumbs
  • 200 millileters cooking oil

Method

  • Step 1

    Tenderize each chicken breast for 1-2 minutes until flattened.

  • Step 2

    Whisk the egg and milk, and add half the seasonings and grated Parmesan in, whilst leaving the other half for the breadcrumbs.

  • Step 3

    In a separate bowl, stir in the seasoning with the breadcrumbs. Coat both sides of the chicken breast in egg wash, then coat in the breadcrumb mixture. Repeat this process with the remaining chicken breast pieces.

  • Step 4

    Add the oil in a frying pan over a medium heat. After 2 minutes, slowly place the chicken breasts into the oil and fry for 4 minutes on both sides (8 minutes in total), until golden on the outside and the juices run clear on the inside.
