Caramelized Onions
- 3 white onions, thinly sliced
- 50 grams butter
- Salt and pepper, to taste
- 2 sprigs thyme
- 1/2 stock cube mixed with 150-200 ml water
- 1 tablespoon sugar

- 250 grams macaroni
- Water, for boiling

Béchamel Cheese Sauce
- 30 grams butter
- 50 grams flour
- 500 ml milk
- 120 grams mild cheddar cheese, grated
- 120 grams gruyère cheese, grated
Method
Step 1
Start by thinly slicing the white onions. In a saucepan, melt butter over a medium heat. Once melted, add the sliced onions and cook on a low temperature for 30 minutes, stirring continuously. Season with salt and pepper.
Step 2
Once the onions begin to brown and soften, add the stock, thyme and sugar and continue cooking until the liquid reduces and the texture thickens.
Step 3
Meanwhile, boil the macaroni for 5-6 minutes or according to packet instructions.
Step 4
Set the caramelized onions aside in a bowl and using the same saucepan add the butter for the béchamel. Whisk in the flour and milk on a low heat until the consistency thickens, and add two thirds of the grated cheeses.
Step 5
Stir through two thirds of the caramelized onions and cooked pasta. In a baking dish, add the macaroni and top with the remaining caramelized onions and grated cheeses. Bake at 180 degrees Celsius fan for 15-20 minutes until the cheese has melted.
