ingredients
- 1 lb crumbled Italian sausage
- 1 small diced yellow onion
- 2 ribs diced celery
- 3 cloves minced garlic
- 3 each peeled and sliced russet potatoes
- 1/2 cup dry white wine
- 3 quarts chicken broth
- 2 cups heavy cream
- 4 tabelspoons chopped fresh parsley
- 1 teapsoons crushed red pepper
- 5 cups chopped kale
- 1/4 cup butter
- 1 cup all purpose flour
Method
Step 1
Heat a large stock pot to medium heat. Add the Italian sausage and sauté until completely cooked through. Remove the cooked sausage from the pot and set aside
Step 2
In the same pot, sauté onions, celery, and garlic until tender and fragrant. Add the white wine and let simmer for 5 minutes. Add the chicken stock, kale, and potatoes. Let simmer until potatoes are cooked through.
Step 3
While soup is simmering, melt the butter in a small pan. Stir in the flour and continue to cook for about 3 minutes. Set aside.
Step 4
Once potatoes are tender and cooked through, add the butter flour mixture and whisk until dissolved and soup thickens.
Step 5
Add the heavy cream, sausage, and parsley.
Step 6
Season with salt and pepper to taste. Enjoy!
