  • 1 pound ground meat (beef, turkey, or chicken)
  • 1/2 onion, diced
  • 2 tablespoons minced garlic
  • 1 tablespoon No-Salt Creole Seasoning
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 1/2 teaspoons chicken bouillon
  • 1/4 cup taco seasoning
  • 1/2 cup water
  • 1 (10 ounce) can Red Gold Original Diced Tomatoes + Green Chilies
  • 1 (10 ounce) can Red Gold Mild Diced Tomatoes + Green Chilies
  • 4 ounces cream cheese, softened
  • 10 ounces melting cheese, cubed
  • 1/2 to 1 can diced green chilies
  • 4 ounces sharp cheddar cheese, cubed
  • 4 ounces shredded sharp cheddar cheese, reserved for topping
  • Fresh jalapeño slices, for garnish
  • Tortilla chips, fresh veggies, or toasted bread, for dipping

Method

  • Step 1

    Preheat the oven to 375°F.

  • Step 2

    In a large skillet, brown the ground meat over medium heat. Drain the excess fat.

  • Step 3

    Add all seasonings, water, and one can of Red Gold® Mild Diced Tomatoes + Green Chilies (do not drain). Stir in garlic and onion, cooking until softened. Let the mixture simmer until most of the liquid has reduced. Remove from heat.

  • Step 4

    In a cast iron skillet or oven-safe dish, layer the cream cheese, melting cheese, cubed sharp cheddar, cooked meat mixture, diced green chilies, and one can of drained Red Gold® Original Diced Tomatoes + Green Chilies.

  • Step 5

    Bake for 15–20 minutes or until the cheese is melted.

  • Step 6

    Remove from the oven, stir everything together, and top with reserved shredded cheddar cheese and jalapeño slices.

  • Step 7

    Return to the oven and broil for 2–3 minutes until the top is bubbly and golden brown.

  • Step 8

    Serve hot with tortilla chips, fresh veggies, or toasted bread.
