ingredients
- 1 pound ground meat (beef, turkey, or chicken)
- 1/2 onion, diced
- 2 tablespoons minced garlic
- 1 tablespoon No-Salt Creole Seasoning
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 1/2 teaspoons chicken bouillon
- 1/4 cup taco seasoning
- 1/2 cup water
- 1 (10 ounce) can Red Gold Original Diced Tomatoes + Green Chilies
- 1 (10 ounce) can Red Gold Mild Diced Tomatoes + Green Chilies
- 4 ounces cream cheese, softened
- 10 ounces melting cheese, cubed
- 1/2 to 1 can diced green chilies
- 4 ounces sharp cheddar cheese, cubed
- 4 ounces shredded sharp cheddar cheese, reserved for topping
- Fresh jalapeño slices, for garnish
- Tortilla chips, fresh veggies, or toasted bread, for dipping
Method
Step 1
Preheat the oven to 375°F.
Step 2
In a large skillet, brown the ground meat over medium heat. Drain the excess fat.
Step 3
Add all seasonings, water, and one can of Red Gold® Mild Diced Tomatoes + Green Chilies (do not drain). Stir in garlic and onion, cooking until softened. Let the mixture simmer until most of the liquid has reduced. Remove from heat.
Step 4
In a cast iron skillet or oven-safe dish, layer the cream cheese, melting cheese, cubed sharp cheddar, cooked meat mixture, diced green chilies, and one can of drained Red Gold® Original Diced Tomatoes + Green Chilies.
Step 5
Bake for 15–20 minutes or until the cheese is melted.
Step 6
Remove from the oven, stir everything together, and top with reserved shredded cheddar cheese and jalapeño slices.
Step 7
Return to the oven and broil for 2–3 minutes until the top is bubbly and golden brown.
Step 8
Serve hot with tortilla chips, fresh veggies, or toasted bread.
