ingredients
- 4 ounces unsalted butter, at room temperature
- 6 1/2 ounces unbleached organic all purpose flour
- 3 1/2 ounces Parmigiano Reggiano, grated
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon Diamond kosher salt, or 1/4 teaspoon Morton kosher salt
- 1/4 teaspoon finely grated lemon zest
- pinch of cayenne or other hot chili powder
- pinch of nutmeg
Method
Step 1
In a large mixing bowl, combine butter with the rest of the ingredients. Mix until a solid dough forms.
Step 2
Add the formed dough to a large piece of plastic wrap and then form the dough into a log shape, roughly 2-3 inches wide. Wrap in plastic wrap and chill for at least 30 minutes.
Step 3
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Step 4
Slice biscuits into 1/4" thick slices and place on baking sheet. Bake for 20-25 minutes or until lightly brown around the edges.
Step 5
Cool the cookies and enjoy with apertivo.
