For the filling
- 1 tablespoon unsalted butter
- 1 tablespoon algae cooking oil (or olive oil)
- 1/2 yellow onion, diced
- 3 garlic cloves, minced
- 6 ounces fresh spinach
- 2 tablespoons chopped fresh dill
- 3 tablespoons capers
- 8 ounces cream cheese
- Zest of 1 lemon
- Kosher salt, to taste
- Freshly ground black pepper, to taste

- 1 whole egg
- 1 egg yolk
- 1 tablespoon water
- 1 kosher salt

For the salmon and puff pastry
- 1 piece (approximately 1 to 1.5 pounds) salmon filet, skin removed
- 2 frozen pre-made puff pastry sheets, thawed
Method
To Make the Filling:
Step 1
In a large pan, melt the butter and add algae cooking oil (or olive oil) over medium heat.
Step 2
Sauté the diced onion until softened, about 3-4 minutes. Add minced garlic and cook for an additional minute until fragrant.
Step 3
Stir in fresh spinach and cook until wilted. Remove from heat and add chopped dill, capers, cream cheese, and lemon zest. Season with salt and pepper to taste. Set the filling aside to cool slightly.
To Prepare the Egg Wash:
Step 1
In a small bowl, whisk together the whole egg, egg yolk, water, and salt. Set aside for brushing the pastry.
To Assemble the Salmon en Croute:
Step 1
Roll out both thawed puff pastry sheets on a lightly floured surface to ensure they fit around the salmon fillet. Place one puff pastry sheet on a parchment-lined baking sheet.

Place the salmon fillet in the center of the pastry and season well with salt and pepper.
