Christmas Cosmos

  • 4 ounces pure cranberry juice
  • 3 1/2 ounces Belvedere vodka
  • 2 ounces Cointreau
  • 1 1/4 ounces cranberry + rosemary simple syrup (recipe below)
  • 1 ounce fresh lime juice
  • Sugared rim (using simple syrup and cane sugar)
  • Sugared cranberries and frosted rosemary, for garnish

Method

To make the cocktail:

  • Step 1

    Sugar the rim of a martini glass using a mixture of simple syrup and cane sugar.

  • Step 2

    In a cocktail shaker, combine pure cranberry juice, Belvedere vodka, Cointreau, cranberry + rosemary simple syrup, and fresh lime juice.

  • Step 3

    Shake the ingredients well in the shaker.

  • Step 4

    Strain and pour the mixture into the prepared martini glass.

  • Step 5

    Garnish the cocktail with a skewer of sugared cranberries and a sprig of frosted rosemary for extra holiday cheer.

Cranberry and Rosemary Simple Syrup

  • 1 cup fresh cranberries
  • 3-4 springs fresh rosemary
  • 1 cup water
  • 1 cup sugar

To make the simple syrup:

  • Step 1

    Rinse 1 cup of fresh cranberries in a colander and set them aside. Gather 3-4 sprigs of fresh rosemary.

  • Step 2

    In a saucepan over medium heat, combine 1 cup of water and 1 cup of granulated sugar. Stir the mixture until the sugar is completely dissolved, then remove the saucepan from heat.

  • Step 3

    Pour the rinsed cranberries into the simple syrup, ensuring they are well-coated. Be cautious not to leave the cranberries in the syrup for more than a few minutes to prevent them from bursting.

  • Step 4

    Repeat the same process with the sprigs of fresh rosemary. Gently coat the rosemary in the simple syrup.

  • Step 5

    Allow the infused syrup to cool before transferring it to an airtight container. Store the container in the refrigerator for up to a week.
