ingredients
- 2 sticks of butter, at room temperature
- 1/2 cup sugar
- 2 1/2 all-purpose flour
- 1/2 cup almond flour
- 1/2 teaspoon salt
- 1 egg yolk
- 1 teaspoon vanilla extract
- Nutella®, for filling
- confectioner sugar, for dusting
Method
Step 1
Preheat the oven to 350 degrees. Line two baking sheets with parchment.
Step 2
In a medium bowl, sift together the AP flour, almond flour, and salt. Set aside.
Step 3
In the bowl of a stand mixer fitted with the paddle attachment, cream together the sugar and butter until light and fluffy. Add the vanilla extract and egg yolk and mix for another 15 seconds.
Step 4
With the mixer running on low speed, in a steady stream, add in the flour mixture. Paddle until the dough just comes together. Do not over mix.
Step 5
Divide the dough in half, and pat each half into a disc. Wrap in plastic wrap, and refrigerate until firm, about 1 hour.
Step 6
Once the dough is chilled, roll out to 1/4 of an inch thick. Set rolled dough back into the refrigerator for 15 minutes before cutting out cookies.
Step 7
Using a linzer cookie cutter, cut out your shapes. Half of your cookies should have a small cut out of the center. Place them on a cookie sheet, and freeze for 30 minutes to ensure that the cookies hold their shape.
Step 8
Place the cookies in the oven and bake for 12 minutes. Let them cool completely before filling.
Step 9
Once they are cooled, dust the cookies with the cut-out centers with confectioners sugar. On the other halves, on the back side of the cookie, spread 1 tsp of Nutella®. Sandwich the two halves together.
