- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup buttermilk
- 1 cup all purpose flour
- 1 cup sugar
- 1/3 cup cocoa powder
- 1 teaspoon baking powder

Frosting
- 1 cup heavy whipping cream
- 4 ounces dark chocolate
Method
Step 1
Make the cupcakes. Preheat oven to 350 degrees. Line one standard size cupcake pan with 11 paper baking cups.
Step 2
In a large bowl whisk the flour, baking powder and cacao powder. In a separate bowl beat the eggs and both sugars on high speed for 4-5 minutes. Add oil and buttermilk, beat them just until combined on low speed. Add the flour mixture and beat on slow speed.
Step 3
Divide batter evenly between the liners. Place in the oven and bake for 20-25 minutes or until toothpick comes out clean. Allow to cool in the pan for 10 minutes before transferring to wire racks to cool completely.
Step 4
Make the Frosting. In a small saucepan, bring the heavy cream to a low boil over medium heat. Remove the cream from heat and pour it over the chopped chocolate in the medium bowl. Stir the mixture until melted and smooth. Refrigerate at least 2 hours.
Step 5
Whip with an electric hand mixer until smooth and fluffy. Top cooled cupcakes with frosting as desired.
