ingredients

  • 1 cup coconut sugar
  • 1/3 cup vegan butter
  • 1 cup oat flour
  • 4 tablespoons cacao powder
  • 1/2 cup pumpkin or sweet potato, mashed
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 1/3 cup (about a large handful) dark chocolate chips, plus more for topping
  • 1/3 cup (about a large handful) pecans

Method

  • Step 1

    Preheat oven to 350ºF (180ºC) and line a brownie tray with parchment paper.

  • Step 2

    In a bowl, cream together the vegan butter and coconut sugar, then mix in the mashed sweet potato or pumpkin.

  • Step 3

    Fold in the dry ingredients until well combined. Add the chocolate chips and fold in.

  • Step 4

    Transfer mixture into the tin and scatter the extra chocolate and pecans on top. Bake for 20 minutes.
