ingredients
- 1 cup coconut sugar
- 1/3 cup vegan butter
- 1 cup oat flour
- 4 tablespoons cacao powder
- 1/2 cup pumpkin or sweet potato, mashed
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- Pinch of salt
- 1/3 cup (about a large handful) dark chocolate chips, plus more for topping
- 1/3 cup (about a large handful) pecans
Method
Step 1
Preheat oven to 350ºF (180ºC) and line a brownie tray with parchment paper.
Step 2
In a bowl, cream together the vegan butter and coconut sugar, then mix in the mashed sweet potato or pumpkin.
Step 3
Fold in the dry ingredients until well combined. Add the chocolate chips and fold in.
Step 4
Transfer mixture into the tin and scatter the extra chocolate and pecans on top. Bake for 20 minutes.
