  • 1/4 - 1/8 cup runny cashew butter (almond butter works too)
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 - 1/8 cup almond flour
  • 1/4 cup chocolate chips

  • 22 gluten-free pretzels (e.g., @glutinofoods)
  • 1/4 cup chocolate chips
  • 1 teaspoon coconut oil (optional)
  • Flakey sea salt

Method

  • Step 1

    In a mixing bowl, combine the runny cashew butter (or almond butter), maple syrup, and vanilla to create the cookie dough layer. Mix until the ingredients are well incorporated.

  • Step 2

    Gradually add the almond flour to the dough mixture, continuing to stir until a uniform dough is formed.

  • Step 3

    Gently fold in about 1/4 cup of chocolate chips into the cookie dough. Make sure they are evenly distributed.

  • Step 4

    With the cookie dough ready, roll it into approximately 11 small, equally-sized balls.

  • Step 5

    Take two gluten-free pretzels and sandwich a ball of cookie dough between them. Gently press the pretzels together to secure the dough.

  • Step 6

    Place the cookie dough pretzel bites on a tray and put them in the freezer for a few minutes to firm up while you prepare the chocolate coating.

  • Step 7

    In a microwave-safe bowl, combine the chocolate chips with coconut oil (if using). Melt the chocolate chips in 20-30-second intervals in the microwave, stirring between intervals, until the chocolate is smooth and fully melted.

  • Step 8

    Remove the cookie dough pretzel bites from the freezer. Dip each bite halfway into the melted chocolate, ensuring it's evenly coated.

  • Step 9

    After dipping, place the bites back on the tray and immediately sprinkle each with a touch of flakey sea salt to enhance the flavor profile.

  • Step 10

    Return the tray to the freezer and let the chocolate harden, which should take about 15-20 minutes.
