ingredients

Homemade Chia Jam:

  • 1 cup fresh or frozen fruit
  • 1 tablespoon chia seeds
  • Honey (optional), to taste
  • 1 large egg, at room temperature
  • 1/3 cup runny peanut butter, at room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • Salt, to taste

Method

To make the Chia Jam:

  • Step 1

    Heat the fruit and a splash of water over medium-high heat until bubbly.

  • Step 2

    Mash the fruit to your desired consistency.

  • Step 3

    Stir in honey (if using) and add chia seeds.

  • Step 4

    Remove from heat and let it cool. The jam will thicken as it cools.

  • Step 1

    Preheat the oven to 350°F. Line a 9x5 inch loaf pan with parchment paper.

  • Step 2

    Whisk the egg, vanilla, syrup, and peanut butter until well combined.

  • Step 3

    Add the dry ingredients and mix until a thick, sticky dough forms.

  • Step 4

    Press the dough into the prepared loaf pan.

  • Step 5

    Bake for 10 minutes. Once baked, allow it to cool completely.

Assembly:

  • Step 1

    Spread the jam of your choice (such as homemade triple berry chia jam) over the cooled cookie base.

  • Step 2

    Place the dish into the freezer for about 1 hour until the jam sets.

  • Step 3

    Cut into bars and optionally drizzle with melted peanut butter and top with chopped peanuts.
