- 1/2 teaspoon cinnamon powder
- 1/2 cup canola oil
Method
Step 1
Pre-heat oven to 180°C (350°)F.
Step 2
Grease a pound cake/bread loaf pan with baking spray and line with a parchment paper that goes up the two sides for easy handling of the cake when baked.
Step 3
In a medium sized bowl, mix the dry ingredients together (flour, baking powder, baking soda, and salt) and set aside.
Step 4
In another bowl, whisk the 2 eggs with the vanilla and sugar just until well combined.
Step 5
Add the oil and mix until well combined. Don’t over-mix.
Step 6
Mash up the three bananas using a fork and add to the egg mixture.
Step 7
Add the flour mixture gradually and mix on low speed until well combined.
Step 8
Using a rubber spatula, scrape down the sides of the bowl. Add the chocolate chips and fold them in with the spatula.
Step 9
Pour the batter into the prepared rectangular pan and sprinkle some extra chocolate chips at the top.
Step 10
Bake for 35 minutes or until the Banana Bread has risen, has a golden color and when a toothpick inserted along the Banana Bread (sides and center) comes out clean but be careful not to over-bake the banana bread so it stays moist and fluffy.
Step 11
Let it cool for 15-20 minutes before slicing it into thin slices. However, if you decide to cut it while still a bit hot, then you are in a for a treat as the chocolate chips would be melting and warm.
