ingredients
- 1 pound cooked and shelled Shrimp
- 1/2 pound pasta, cooked
- 3 small cucumbers, sliced into halves
- 10 cherry tomatoes, quartered
- 1/2 green bell pepper, finely diced
- 1/2 small red onion, finely chopped

Yogurt Mayo Dressing
- 5 tablespoons full fat yogurt
- 3 tablespoons garlic Mayonnaise
- 2 teaspoo fresh lime juice
- 1 teaspoo mustard
- 1/4 teaspoon black pepper
- 1/4 teaspoons salt
Method
Step 1
Cook the pasta according to the packet instructions and cool it.
Step 2
Make the dressing – In a small bowl, mix yogurt, mayo, lime juice, yellow mustard, cayenne pepper, black pepper, and salt.
Step 3
Prep the veggies – finely chop the onions, dice the green bell pepper, quarter the cherry tomatoes and slice the cucumber.
Step 4
Assemble the Salad – Add the cooled pasta in a large salad bowl with 2 Tablespoons of dressing. Mix well to coat the pasta evenly with dressing.
Step 5
Next, add the cooked shrimp, chopped veggies, and the remaining salad dressing into the salad bowl and mix until everything is well coated.
Step 6
Keep the Salad chilled in the refrigerator until you serve.
