ingredients
- 1 tablespoon sesame oil
- 300 grams salmon
- 1/2 cup teriyaki sauce
- 2 cloves of garlic
- 2 tablespoon mirim
- 1 cucumber
- 2 tablespoon rice wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon crushed coriander seeds
- 1 teaspoon lime juice
- 1 cup cooked rice
- 1 cup kale
Method
Step 1
For the cucumber In a small bowl add the cucumber, rice wine vinegar, sugar, coriander seeds and lime juice. Mix well and set aside.
Step 2
Slice the salmon into cubes. Heat a none stick pan with the sesame oil. For well done salmon, add it now and for rare salmon, add the teriyaki, garlic and mirin, allowing to bubble and then add the salmon. Allow the sauce to reduce before turning off
Step 3
For the Salmon Heat the sesame oil and add the salmon. Cook for 2-3 minutes before adding the the garlic and teriyaki sauce. Cook off until thick and sticky.
Step 4
Serve the rice, followed by the dressed kale, salmon, pickled cucumber and finish with avocado, spring onions & coriander. Sprinkle the salmon and rice with black and white sesame seeds.
