For the Chicken
- 1 tablespoon olive oil
- 1 tablespoon harissa powder
- 1 1/2 tablepoons sumac
- Juice of ½ lemon
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon paprika
- 4 bone-in, skin-on chicken thighs
- 1 large sweet potato, sliced `
- 1 medium onion, diced

For the Yogurt Dipping Sauce
- 1/2 cup plain Greek yogurt
- 1 teaspoon fresh lemon juice
- 1 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 2 tablespoons finely chopped chives
Method
Step 1
Preheat the oven to 375°F.
Step 2
In the bottom of a baking dish, combine the olive oil, harissa powder, sumac, lemon juice, salt, pepper, and paprika. Mix well to create a marinade.

Add the chicken thighs to the dish, turning them to coat thoroughly in the marinade.

Add the sliced sweet potato and diced onion, mixing to ensure they are coated as well.
Step 5
Season well with salt and pepper before placing the dish in the oven.

Roast the chicken in the preheated oven for 25 minutes. After this time, turn the oven off but leave the chicken inside for an additional 5 minutes before removing it from the oven.
Step 7
While the chicken is roasting, whisk together the Greek yogurt, lemon juice, garlic powder, salt, and chopped chives in a small bowl. Mix until smooth.
Step 8
Serve the roasted chicken thighs alongside the sweet potatoes, with the yogurt dipping sauce on the side for a deliciously tangy complement.
