ingredients
- 2 1/2 cups pineapple juice
- 4 ounce coconut liquor
- 8 ounces Empress 1908 Gin
- 6 ounces grenadine syrup
- 2 1/2 cups tonic water
- 2 ounces simple syrup
- 1 1/4 cups lemon soda (no sugar)
Method
Step 1
Whisk together the pineapple juice and coconut liquor in a freezer proof bowl.
Step 2
Whisk together the gin, grenadine syrup, simple syrup, tonic and lemon soda in another freezer prod bowl. Freeze both overnight.
Step 3
The following day, remove both bowls from the freezer and scrap with a fork, resulting in ice shavings.
Step 4
To serve, place 2-3 tablespoons of the empress granita on the bottom of a cocktail glass. Top with half of the pineapple granita. Enjoy.
