Pineapple and Gin Granita

ingredients

  • 2 1/2 cups pineapple juice
  • 4 ounce coconut liquor
  • 8 ounces Empress 1908 Gin
  • 6 ounces grenadine syrup
  • 2 1/2 cups tonic water
  • 2 ounces simple syrup
  • 1 1/4 cups lemon soda (no sugar)

Method

  • Step 1

    Whisk together the pineapple juice and coconut liquor in a freezer proof bowl.

  • Step 2

    Whisk together the gin, grenadine syrup, simple syrup, tonic and lemon soda in another freezer prod bowl. Freeze both overnight.

  • Step 3

    The following day, remove both bowls from the freezer and scrap with a fork, resulting in ice shavings.

  • Step 4

    To serve, place 2-3 tablespoons of the empress granita on the bottom of a cocktail glass. Top with half of the pineapple granita. Enjoy.
