Pancetta, kale and Brussels Sprout Galette

ingredients
- 1 puff pastry sheet
- 1/2 cup pancetta
- 1 cup brussels sprouts
- 2 cups kale
- 2 cloves garlic
- 1 teaspoon salt
- 4 sprigs of thyme
- 1/2 cup cottage cheese
- 1 tablepsoon olive oil
Method
Step 1
In a medium pan, cook the pancetta until crispy. Add the brussel sprouts and cook for a further 2 minutes or until the sprouts begin to crisp around the edges. Add the kale and cook for a further 1minute.
Step 2
On a baking tray lined with baking paper, place the puff pastry down and add the greens in the centre leaving roughly 2 centimeters around the edge. Dollop the cottage cheese around and then carefully fold the edges over.
Step 3
Scatter the thyme ton top and bake in a pre heated 190℃ for 12-15 minutes.
