ingredients
- 4 corn tacos
- 4 eggs
- 1/2 teaspoon salt
- 1 tablespoon cream
- 4 rashers bacon
- 1 diced tomato
- 1/2 diced onion
- 1/4 sliced chilli
- 1/2 teaspoon salt and pepper
- 1 teaspoon juice lime
- 1/2 diced avocado
- 1 tablepoons finely chopped corinader
- 2 tablespoon to serve mango chutney
Method
Step 1
In a small bowl, mix together the diced tomato, onion, chilli, salt, pepper and lime. Set aside
Step 2
In a medium pan, heat the pan and add the bacon rashes, cooking without oil until crispy (3-4 minutes) on both sides. Remove from the pan and set aside.
Step 3
In the remaining bacon oil, toast the tortillas or wraps until warm. Arrange on a serving plate.
Step 4
In a small, whisk together the eggs, salt and cream until the yolks are emulsified evenly (1 minute or so). In the same pan as the bacon, heat 1 tsp butter. Before the butter completely melts, add thee eggs. Using a spatular or wooden spoon, fold in from the edges ones the eggs begin to set. Leave the heat on medium low to create the perfect fluffy scramble.
Step 5
To serve, distribute the eggs between the tacos. Top with thee crispy bacon, tomato salsa and diced avocado. Finish with a sprinkle of chopped coriander and mango chutney.
