ingredients

  • 1 cubed mango
  • 1 cup shiso leaves
  • 2 cups green tomatoes
  • 1/2 cup olive oil
  • 1/2 juiced and zested lemon
  • 1/2 teasopon seed mustard

Method

  • Step 1

    Place the oil, mustard, lemon juice and zest into a jar. Shake well.

  • Step 2

    In a pan, place the tomatoes in without oil. Cook, only occasionally wiggling the pan until blistered - around 5-6 minutes. Remove from the heat and leave to cool

  • Step 3

    Mix together the mango, shiso, blistered tomatoes with the dressing. Serve and enjoy
