Black Bean Pasta With Veggies
Black Bean Pasta with Fresh Local Asparagus + Basil + Mushrooms + Celery + Sundried Tomato + Spinach + Avocado + Sprouts! Lightly sauté garlic and onion in coconut oil. Add in chopped celery. Then chopped mushrooms and sun dried tomato. Cook black bean pasta (or any other type of pasta) in meantime. When pasta is almost done, add asparagus and spinach to sauté for a couple minutes. Drain pasta and add in a couple tablespoons of coconut oil or butter. Mix in a tablespoon or so of nutritional yeast, salt and pepper. Stir in chopped basil. Add sautéed veg on top of pasta. Top with fresh avo and sprouts. Enjoy!
