  • 1 portion of chicken broth or e.g. the same number of chicken feet
  • salt and pepper in grains
  • about 4.5-5 liters of water (so that the water covers the bones)
  • 2 peeled onions
  • ginger 7 cm cut into pieces a
  • handful of coriander seeds
  • 2 cinnamon sticks
  • 4 anise stars
  • 4 seeds of black cardamom
  • 5 cloves a pinch of palm sugar
  • fish sauce to taste a bunch of coriander
  • sawtooth parsley (ngo gai)
  • sirloin steak (a small piece per person)
  • vermicelli rice noodles (threads)
  • bunch of mint
  • bunch cilantro
  • bean sprouts about 200 grams
  • chives - chopped
  • 1 lime per person
  • fish sauce
  • sawtooth (ngo gai)
  • thai basil
  • fried onion

Method

  • Step 1

    Pour water into the pot. Put the beef and chicken bones cut into pieces. We cook. After about 20 minutes, pour out the storms, wash the bones and pour clean water. Add about one tablespoon of salt and about 10 grains of pepper to the pot. In a separate pan, brown, peeled and chopped onion, ginger, coriander, stars, cardamom, coriander seeds and cloves. We add everything to the broth. Season the broth with about 100 ml of fish sauce and a pinch of sugar. Simmer everything for a minimum of 8-10 hours, preferably 12 hours. After this time, add a small bunch of sawtooth (ngo gai) and a bunch of coriander. After another 30 minutes of cooking, strain the broth through the fabric. (We only cut the broth). Take the broth off the heat and put it into the hot one, just before serving, add the very thinly sliced ​​sirloin.

  • Step 2

    When the broth is ready, prepare the additions to the soup. Cook the noodles according to the recipe on the package. Put a spoonful of pasta into the bowls, and pour the whole with very hot broth with sirloin. At the end, garnish with fresh vegetables from stage 2 and fish sauce to taste and lime juice. Sprinkle everything with fried onion and eat it immediately.
