"Soufflée" omelette

ingredients

  • 3 Eggs
  • 1/3 cup Sparkling water
  • 50 grams Parmesan cheese
  • 1 tablepsoon Chives
  • 1 tablepsoon Dill
  • To Taste Salt
  • To Taste Pepper
  • 5 pieces Green Asparagus
  • 2 tablepoons Greens peas
  • To Taste Ricotta cheese
  • 1 tablepsoon Olive oil

Method

  • Step 1

    Start by peeling and cutting the vegetables then cook them in a large pot of water with salt, bring it to a boil then reduce the heat and let them cook for 5 minutes.

  • Step 2

    Drain them and put them in a large bowl of cold water to fix the color. Set aside.

  • Step 3

    Then in a pan, add a bit of olive oil and cook the asparagus for about 5 minutes or until they are well colored. Set aside.

  • Step 4

    For the soufflée omelet, separate the whites from the yolks. In a large bowl, beat the egg whites with sparkling water until stiff.

  • Step 5

    Then add the yolks, parmesan cheese, the herbs, salt and pepper to taste and mix everything delicately so you don't break down the whites.

  • Step 6

    Heat a pan with some butter and pour the omelet mixture into it. Spread it evenly and let it cook for about 10-15 minutes or until the edges come off the stove.

  • Step 7

    Finally, topped it with ricotta cheese, the asparagus, green peas and chives and enjoy !
