ingredients

  • 3 eggs
  • 100 grams hazelnuts, finely ground
  • 120 grams whole wheat flour
  • 40 grams olive oil
  • 10 grams apple sauce (sugar free)
  • 4 grams baking soda
  • 1 pear, peeled and cut into cubes
  • 50 grams chocolate, roughly chopped
  • 50 grams hazelnuts, roughly chopped
  • 50 grams rapadura sugar
  • 1 pear, sliced to garnish

Method

  • Step 1

    Preheat oven to 190°C (375ºF) and grease an 8 inch cake mold.

  • Step 2

    In a large mixing bowl, beat eggs until pale yellow and foamy. Beat in olive oil, apple sauce and sugar. Mix until everything is well combined.

  • Step 3

    Add in flour, ground hazelnuts and baking soda. Mix to combine.

  • Step 4

    Add half the chocolate and hazelnuts to the batter. Pour half of the batter into the prepared mold, add the pear cubes and pour the remaining batter over it.

  • Step 5

    Arrange the sliced pear on top of the cake. Top with remaining chopped chocolate and hazelnuts.

  • Step 6

    Bake for 30-35 minutes until a toothpick inserted in the center comes out with a few crumbs. Let cool before slicing.
