Avocado and Goat Cheese Toasts

ingredients

  • 2 slices sourdough bread
  • 1 ripe avocado
  • 2 large eggs
  • 3 radishes, thinly sliced
  • 6 tablespoons goat cheese
  • Salt,
  • Pepper, to taste
  • Fresh basil, for garnish
  • Lemon wedges, for serving (optional)

Method

  • Step 1

    Toast the sourdough bread to desired doneness.

  • Step 2

    Make your poached eggs by bringing a large pot of water to a boil with the vinegar. Crack eggs into two small bowls. Make a whirlpool with a spoon and add your eggs one at a time. Cook for 3 minutes. Remove eggs with a slotted spoon into bowl of water with ice to stop the cooking. Set aside until ready to use.

  • Step 3

    Remove avocado skin, then mash avocado with a fork on one toast. Season with salt, pepper, and some lemon juice to taste.

  • Step 4

    Spread goat cheese on the other toast, then add sliced radish, salt, and pepper to taste.

  • Step 5

    Finally, top your toasts with the eggs. Season with salt and pepper and fresh basil as necessary.
