"Quick Gluten-Free Chicken soup with oats? #ad Today I am super excited to share with you an amazing Greek-Style Chicken soup with Avgolemono sauce recipe in partnership with @epicbar & @thefeedfeed. This soup was served to the whole family for dinner in under 30 mins, and it was SO good and SO healthy that I couldn’t resist not sharing it with you friends! But what made this soup super delicious? The fact that I used the pasture-raised rich Chicken Bone broth from @epicbar (with no additives) and replaced the traditional rice with oatmeal! My kids didn’t even realize they were eating oats instead of rice (well…I kept it as a secret till they ate it all)?. To be honest, this is the kind of quick (as said under 30 mins) meal I want after a long weekend of overindulging ? packed with flavors and scents! Recipe Card

ingredients

  • 14 ounces EPIC Homestyle Savory Chicken Broth
  • 2 tablespoons butter
  • 1 small carrot, diced
  • 1 celery stalk, chopped
  • 1 shallot, chopped
  • 3/4 cup shredded rotisserie chicken
  • 4 cups water, plus more, if needed
  • 2/3 cup oats
  • salt, to taste
  • black pepper, to taste
  • for serving fresh thyme

Method

  • Step 1

    In a medium heavy-bottom pot, melt the butter over medium heat.

  • Step 2

    Add carrots, celery, and shallots. Cook until softened, then add chicken.

  • Step 3

    Add Epic Chicken Broth and water. Bring to a boil over high heat. Cook for 25 minutes. Add more water if needed.

  • Step 4

    Add oats, salt and pepper to taste. Reduce heat to medium-low and simmer for 5 minutes until oats are tender. Set aside and let rest for at least 20 minutes.

Avgolemono Sauce

  • Step 1

    Just before serving, whisk together lemon juice and egg.

  • Step 2

    While whisking, add two ladles of warm broth from soup pot. This helps temper the eggs and prevents them from scrambling.

  • Step 3

    Add sauce to soup and stir well.

  • Step 4

    Garnish with fresh thyme, and more fresh cracked pepper if you like. Enjoy soup hot or warm.
