Vegan No-queso Quesadillas

"What I had for dinner tonight--the best vegan no-queso quesadillas! Homemade chipotle hummus, black beans, baby spinach, and fresh salsa layered between @foodforlifebaking tortillas and cooked until golden brown. I topped it with a healthy smear of homemade guacamole and served it alongside low fat organic corn chips and more salsa.? I think @thewholetara would love this healthy take on quesadillas! Hummus

1 can organic chickpeas
2 tbs organic tahini
Juice of 2 lemons
4 cloves garlic
Pinch of red pepper
1/4 cup water
1 tsp cumin
Salt to taste
2 tbs evoo

Blend all in ingredients until smooth in a food processor.

Fresh salsa

4 ripe tomatoes
1/4 green bell pepper
1 jalapeño, seeded
1/4 cup cilantro
1/8 red onion
Chili powder
Cumin
Lime juice
Coriander
S/p

Pulse all ingredients in a food processor to desired texture. Adjust seasonings to taste.
