Butternut Squash And Potato Hash
Butternut Squash and Potato Hash. Topped with eggs and baked just until they're perfectly sunny side up! <br><br> RECIPE: <br><br> Cut a small butternut squash and a few potatoes of choice into a medium dice and sear in a hot pan with a bit of oil just until almost fork tender, season with kosher salt, cracked black pepper and a few pinches of cumin powder (great with squash!) <br> Then toss in diced peppers and shallots and saute until translucent and soft. Lastly add in some italian sausage that has been taken out of its casing and fully cooked in a separate pan. Finish with fresh parsley.
