  • 1 to 1 1/2 lbs chicken breast or thighs
  • 2 tablespoons avocado oil
  • 3-4 cups cooked rice, for serving
  • Shredded carrots, for serving
  • Sliced cucumbers, for serving
  • Cilantro, for garnish

Marinade

  • 1/3 cup coconut milk
  • 3 tablespoons tamari
  • 1 tablespoon fish sauce
  • 1 lime, juiced and zested
  • 1 tablespoon honey
  • 1 tablespoon sriracha
  • 1 teaspoon yellow curry powder
  • 2 cloves garlic, minced

Peanut Sauce

  • 2 tablespoons avocado oil
  • 1/2 cup unsweetened creamy peanut butter
  • 2 tablespoons tamari
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 2 cloves garlic, grated
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon red curry paste
  • Water, to thin, as needed

Method

  • Step 1

    In a medium bowl, whisk together all marinade ingredients. Add chicken and mix to coat. Cover and marinate in the fridge for at least 1 hour.

  • Step 2

    Heat avocado oil in a large skillet over medium heat. Remove chicken from marinade and cook for 14–16 minutes, flipping occasionally, until browned and fully cooked. Let rest before slicing.

  • Step 3

    In a medium saucepan, heat avocado oil over medium heat. Add garlic, ginger, and red curry paste and cook for 30 seconds until fragrant. Remove from heat and stir in tamari, vinegar, honey, lime juice, and peanut butter. Whisk until smooth. Thin with water to desired consistency, starting with ¼ cup.

  • Step 4

    To assemble the bowls, divide rice among serving bowls. Add shredded carrots and sliced cucumbers. Top with sliced chicken and garnish with cilantro. Drizzle with peanut sauce before serving.
