  • 8 boneless chicken thighs
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Garlic powder, to taste
  • 1 tablespoon avocado oil

For the Mushroom Sauce

  • 1/2 yellow onion, chopped
  • 8 ounces baby bella mushrooms, washed and sliced
  • 3 garlic cloves, finely chopped
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Fresh thyme, for garnish

Method

  • Step 1

    Season the chicken thighs generously with salt, pepper, and garlic powder on both sides.

  • Step 2

    In a large pan, heat the avocado oil over medium-high heat. Once hot, add the seasoned chicken thighs and cook for 5-6 minutes per side until fully cooked and golden brown. Remove the chicken from the pan and set aside.

  • Step 3

    Lower the heat to medium-low and add the chopped onion to the same pan. Sauté for a few minutes until onions are translucent.

  • Step 4

    Add the sliced baby bella mushrooms and sauté for another 5 minutes until softened. Then add the chopped garlic and cook for an additional minute.

    Turn the heat up to medium-high and pour in the chicken stock. Using a wooden spoon, scrape up any browned bits from the bottom of the pan. Let this mixture simmer for a few minutes.

    Stir in the heavy cream, parmesan cheese, dried rosemary, and thyme. Simmer on low for 3-5 minutes, until the sauce thickens. You’ll know the sauce is ready when you can drag a spoon across the pan, leaving a clear path.

    Add the cooked chicken back into the pan, coating it with the mushroom sauce. Garnish with fresh thyme.
