  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 medium green pepper, diced

  • 4 cups vegetable stock or water
  • 2 cups sweet potatoes, chopped into cubes
  • 1 15-ounce can diced tomatoes
  • 1 15-ounce can kidney beans
  • 1 cup uncooked green or brown lentils, soaked for 4 hours (optional; see notes)
  • 1 tablespoon oregano
  • 1 tablespoon Mexican chili powder
  • 1 teaspoon smoked paprika, (sub. with regular paprika)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon Himalayan pink salt
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon chili flakes
  • 1/2 cup cilantro, chopped (portion ¼ cup; ¼ cup)
