  • 2 leeks, the white part
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Himalayan pink salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili flakes
  • 1 cup whole milk ricotta
  • 1 cup Parmigiano-Reggiano, grated
  • 1 cup herbs, minced (parsley, cilantro, basil, and/or mint) (see notes)
  • 2 teaspoons lemon zest, lightly packed
  • 2 large eggs
