  • 8 cups spinach or kale, blanched (or 3 cups frozen spinach, defrosted

  • 1 tablespoon vegetable oil
  • 1 teaspoon cumin seed
  • 2 cloves garlic, minced or grated
  • 1 teaspoon ginger, minced or grated
  • 1 teaspoon green chilis , minced (sub with jalapeno or Serrano peppers)
  • 1/2 teaspoon Himalayan pink salt
  • 1/2 teaspoon turmeric powder
  • 1 cup green pepper, chopped
  • 1 1/4 cups frozen green peas
  • 1/2 cup fresh cilantro or coriander leaf, roughly chopped

  • 1 teaspoon amchur
  • 2 tablespoons vegetable oil, or as needed (to cook the patties)
