For the pastry

  • 1 1/2 cups all-purpose flour
  • 3 tablespoons rice flour
  • pinch Himalayan pink salt
  • 2 tablespoons ghee, slightly warmed
  • 1/2 cup water
  • 1 tablespoon ghee
  • 1/3 cup pistachios, ground medium
  • 1/4 cup castor sugar
  • 1/3 cup dried apricots, finely chopped
  • 1/2 teaspoon cardamom powder
  • 2 tablespoons pistachios, roughly chopped, for the topping

For the traditional milk solids filling

  • 1/2 cup khoya, also known as mawa, grated
  • 1/4 cup cashews and almonds, ground medium
  • 1/4 cup castor sugar, see instructions for alternatives
  • 1/4 cup cranberries and raisins, chopped
  • 1/2 teaspoon cardamom powder
