For baking in the oven
- 1 pound eggplant (1 -2 eggplant), chopped into ¾-inch pieces
- 28 ounces whole peeled tomatoes (a large can)
- 3-4 large fresh tomatoes, chopped into 1-inch pieces
- 6 tablespoons extra-virgin olive oil, (portion 3 tablespoons, then 3 tablespoons)
- 6-8 cloves garlic , peeled, smashed, and chopped roughly (portion half, then half)

- 1 large yellow onion, chopped into ¾-inch pieces
- 2 bell peppers, any color, seeded and chopped into ¾-inch pieces
- 1 teaspoon Himalayan pink salt, or to taste
- 1 teaspoon black pepper, or to taste
- 1 pound large zucchinis (1 -2), chopped into ¾-inch pieces
- 1 bay leaf
- 1 tablespoon fresh oregano leaves, (or ½ tablespoon dried
- 2 tablespoons red wine vinegar, or to taste
