  • 1 teaspoon Himalayan pink salt

  • 1 medium onion, finely chopped (¾ cup)
  • 4 ounces baby portobello mushrooms, finely chopped (1 ½ cups)

  • 4 to 5 cups vegetable stock, as needed
  • 1 1/2 tablespoons soy sauce, or more to taste
  • 1 teaspoon Himalayan pink salt, or more to taste
