ingredients

  • 6 cups washed and chopped green lettuce
  • 2 stalks sliced thinly at a diagonal celery
  • 1/3 cup cucumber, sliced into chunks
  • 1/4 bell pepper
  • 1/4 cup crumbled feta
  • 1/3 cup pita chips or small sourdough bread cubes
  • 2 tablepoons salad dressing, or to taste

Method

  • Step 1

    Place all prepared ingredients in a mixing bowl. Pour 2 tablespoons of dressing evenly over the top and use two forks to mix it gently.

  • Step 2

    Transfer to a serving bowl, or individual salad bowls. If you like, garnish with salt and freshly ground pepper. Enjoy!

  • Step 3

    NOTE: If you don’t use bell pepper, try radishes, kohlrabi, a few olives, sliced pickles, or jarred pepperoncini peppers For the salad dressing, I recommend my Red Wine Vinaigrette. You could also use good olive oil and balsamic vinegar, or any dressing of your choice.
