ingredients
- 3 vegan “hard-boiled eggs”
- 1/4 cup Chosen Foods Original Vegan Mayo
- 1-2 teaspoons mustard, adjusted to taste
- 2 tablespoons minced fresh parsley
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 2 slices of bread (use gluten-free if necessary)
- 3/4 cup vegan mozzarella cheese
- 1/4 cup vegan Parmesan cheese, for topping
- Chosen Foods 100% Pure Avocado Oil, as needed
- 1 tablespoon vegan butter
Method
Step 1
Chop the vegan eggs and place them in a bowl.
Step 2
Add the Chosen Foods vegan mayo, mustard, parsley, and season with salt and pepper. Mix well to combine, then refrigerate until ready to use.
Step 3
Top one slice of bread with vegan mozzarella and vegan parmesan cheese. Place the second slice of bread on top to form a sandwich.
Step 4
Heat a medium pan over medium heat and add a drizzle of Chosen Foods Avocado Oil along with the vegan butter.
Step 5
Once the butter has melted, place the sandwich into the pan. Toast for 3-4 minutes on each side, or until golden brown.
Step 6
Remove the sandwich from the pan, carefully open it, and add a few scoops of the vegan egg salad mixture. Top with more grated vegan parmesan cheese if desired. Close, cut in half, and enjoy!
