ingredients

  • cup 2.25 Warm water
  • tablespoons 1 Sugar
  • teaspoons 1 Dry yeast
  • tablespoons 2 Olive oil
  • tablespoons 1 Kosher salt
  • cups 5 Bread flour
  • Handful 1 Cornflour
  • tin 1 Chopped tomatoes (can)
  • clove 2 Garlic
  • tablepsoon 0.5 Olive oil
  • pinch 1 Dried basil
  • pinch 1 Salt
  • tablespoons 1 Sugar
  • Handful 1 Parmesan cheese
  • ball 1 Mozzarella
  • pinch 1 Dried oregano

Method

  • Step 1

    Preparing the base: Combine warm water, sugar, yeast into a bowl Stir with fork for 30 seconds Wait for the yeast to foam Add olive oil, salt, flour to bowl Mix with wooden spoon until mixture is consistent Add a small amount of olive oil to a large glass bowl and cover its inner surface. Add the dough to the bowl, moving it around so the dough’s surface is covered in a thin layer of oil Cover bowl with cling film Leave for at least one hour, in a warm part of your home, to rise. Ideally overnight

    Preparing the sauce: De root and peel garlic Combine all sauce ingredients in blender. Blend until smooth

  • Step 3

    Making the pizza: Preheat oven to as hot as it’ll go for an hour. Make sure the tray/stone is in the oven Knead the dough until its elastic. It should take 5 mins Split the dough into 4 Roll until its as thin as you can get it Spread a pinch of corn flour over the pizza base Carefully remove the tray from the oven and place the base corn flour side down. Place the base corn flour side down on to your pizza peel if you’re using a stone. Put 4 tablespoons of sauce on top. Spread with the back of the spoon Apply a generous layer of Parmesan cheese Dry the mozzarella with a kitchen roll or a tea-towel. Push down gently to remove as much moisture as possible Pull mozzarella apart and place lumps across pizza Sprinkle a pinch of oregano on top Put into oven Take out when cheese starts to brown
