ingredients

  • 1/2 cups Channa dal
  • 1/2 cups Yellow moong dal
  • 3 tablespoons green chili-ginger-garlic paste
  • 2 tablespoons cumin seeds
  • 1/4 cups chopped onion
  • 1/4 cups chopped cilantro
  • 1/2 tablespoons Salt
  • 3 cups oil

Method

  • Step 1

    Soak the lentils in water for about 2 hours and drain them completely when done. You don’t want any water in the lentils as this alters the batter consistency

  • Step 2

    Blend the lentils coarsely using very little (2 tbsp) to no water. Thicker batter ensures that the fritters absorb minimum oil during frying and that they become crispy.* you can add a little bit of semolina if you need to thicken the batter.

  • Step 3

    Transfer the batter to a bowl, add cumin seeds, green chili-ginger-garlic paste, onions, cilantro, and salt. Mix everything.

  • Step 4

    Deep fry using neutral oil, stirring occasionally until the fritters look golden brown.
