ingredients
- 4 russet potatoes
- 4 tablespoons olive oil
- 2 teaspoons salt
- 3-4 tablespoons butter, cubed into 4 equal pieces
- 3 1/2 ounces Société Roquefort
- 1/2 cup Medjool dates, pitted and chopped
- 1/2 cup walnuts, roughly chopped
- 1/3 cup maple syrup
- 1 teaspoon ground cinnamon
- 4-5 strips uncured bacon, cooked and chopped
- Fresh chives, for garnishing
- Honey, for garnishing
- Flakey sea salt, for garnishing
Method
Step 1
Preheat oven to 425F.
Step 2
Rinse and pat dry the russet potatoes. Prick with a fork all over each potato.
Step 3
Rub the potatoes with the olive oil, and then the 1 ½ teaspoons salt, so it’s evenly coated.
Step 4
Place directly on your oven racks to bake 20 minutes.
Step 5
Reduce heat to 400F to finish baking 30-40 more minutes, until fork tender.
Step 6
On a parchment paper lined baking pan, add the chopped medjool dates and roughly chopped walnuts. Drizzle the maple syrup, then season with the remaining ½ teaspoon salt and ground cinnamon. Toss to combine.
Step 7
Bake in the oven (at 400F) for 8-12 minutes, until caramelized and golden. Remove from oven to cool while the potatoes finish cooking.
Step 8
Remove from the oven with kitchen tongs. Immediately slice open halfway, pinch the ends to open it up, and add the butter. Use a fork to spread the butter and fluff up the insides.
Step 9
Season the potatoes with salt and black pepper to taste.
Step 10
Layer the baked potatoes with the caramelized dates, candied walnuts, crumbled Société Roquefort blue cheese, and the crispy bacon bits.

Garnish with a drizzle of honey and freshly chopped chives to enjoy!
