If I could have one cake for the rest of my life, this would be it! This recipe is inspired by @cakeitwithjustin, I tweaked a bit and veganized and was very very happy. Please support his page, and I am listing recipe below ⬇️

ingredients
- 2 cups all-purpose flour
- 1 1/2 cups Dutch processed cocoa powder
- 1 1/2 cups sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 cup oat milk
- 2 vegan eggs
- 1/3 cup neutral oil
- 1 cup strong coffee, hot
- 2 teaspoons vanilla
- 1/4 cup vegan sour cream
Method
Step 1
Sift together the dry ingredients and whisk to combine.
Step 2
Add in the wet ingredients and whisk until evenly combined.
Step 3
Divide batter evenly between 3 6-inch cake pans that are greased and lined with parchment paper (coat cocoa powder to ensure that the layers don’t stick).
Step 4
Bake at 350F for 20-30 min or until layers have a slight bounce to the touch and a toothpick comes out with a few wet crumbs attached.
Step 5
Let cakes cool in pan for 10 minutes, then carefully release and let cool on cooling racks until completely cool.
Step 6
Cut each layer in half before filling + frosting for a suuper tall cake, this step is optional though!
