ingredients
- 8 pieces bone-in chicken (thighs, drumsticks, or wings)
- 1/2 teaspoon sazon
- 6 garlic cloves, mashed
- 2 tablespoons sofrito
- 2 teaspoons adobo
- 1/2 teaspoon dried oregano
- 1 tablespoon neutral oil
- 1/2 teaspoon granulated sugar
- 3 cups water
- 1/4 red onion, chopped
- 1/4 green bell pepper, seeded and chopped
- 1/4 red bell pepper, seeded and chopped
- 2 tablespoons Better Than Bouillon Roasted Chicken Base
- 1 tablespoon soy sauce
- 1 tablespoon tomato paste
- Juice of 1 lime
- 1/2 teaspoon kosher salt
- 1 1/2 cups extra long-grain rice, rinsed
Method
Step 1
In a bowl, combine chicken with sazon, and half of the garlic, sofrito, adobo, and oregano. Set aside to marinate.
Step 2
In a large pot, heat oil over medium. Add sugar and let it caramelize slightly—about 10–15 seconds.
Step 3
Add chicken to the pot and sear both sides for 2–3 minutes until golden.
Step 4
Add 1 cup of water, cover partially, and simmer for 8–10 minutes until chicken is tender and liquid reduces.
Step 5
Stir in the chopped onion, bell peppers, soy sauce, Better Than Bouillon Roasted Chicken Base, tomato paste, lime juice, salt, and remaining garlic, sofrito, adobo, and oregano. Cook for 1–2 minutes until vegetables soften.
Step 6
Add remaining 2 cups of water and bring to a boil. Stir in rinsed rice and cook uncovered, stirring often, for 5–7 minutes until most liquid is absorbed.
Step 7
Gently mound the rice into a dome shape in the pot’s center. Cover with a lid, reduce heat to low, and cook undisturbed for 20 minutes.
Step 8
Remove from heat, fluff with a fork, re-cover, and let rest for 5 minutes before serving.
