  • 1 pound beef round chunks
  • 2 tablespoons sofrito
  • 1 teaspoon soy sauce
  • 1 teaspoon adobo seasoning
  • 1/2 teaspoon sazon seasoning
  • 1/2 teaspoon dried oregano
  • Juice of ½ lime
  • 1 tablespoon olive oil
  • 1/2 teaspoon granulated sugar
  • 2 teaspoons Red Gold Roasted Garlic Tomato Paste
  • 3 cups water
  • 1/4 onion, sliced `
  • 1/4 red bell pepper, sliced `
  • 1/4 green bell pepper, sliced `

Method

  • Step 1

    In a large bowl, combine the beef chunks with sofrito, soy sauce, adobo, sazon, oregano, and lime juice. Mix well until the beef is fully coated with the seasonings.

  • Step 2

    Heat olive oil in a large pot over medium heat. Add the sugar and let it caramelize in the hot oil, stirring occasionally until it turns a golden brown.

  • Step 3

    Add the seasoned beef to the pot and cook, covered, for 15 minutes. Stir halfway through to ensure the beef browns evenly and absorbs all its juices.

  • Step 4

    Stir in the Red Gold Roasted Garlic Tomato Paste and 1 cup of water. Cover and cook for another 10 minutes until most of the liquid is absorbed.

  • Step 5

    Add another cup of water and cook for an additional 10 minutes, covered, until the liquid is mostly absorbed.

  • Step 6

    Stir in the sliced onion, red bell pepper, and green bell pepper, along with the remaining 1 cup of water. Cover and cook for 10 more minutes, or until the sauce thickens and the vegetables are tender.

  • Step 7

    Enjoy with white rice, avocado, and plantains.
