ingredients
- 3 cloves of garlic confit
- 1 piece of toasted challah
- 1 tablespoon (12 grams) greek yogurt
- 1/2 teaspoon lemon zest
- 1/2 teaspoon lime zest
- 1 tablespoon (12 grams) lemon juice
- To Taste salt and pepper
- 30 grams unsalted butter
- 1/2 tablespoon (12 grams) ground paprika
- 1 piece of poached egg
- 1/4 tablespoon (12 grams) chili flakes
- To Taste fresh dill
Method
Step 1
Garlic confit: Place garlic (2-3 heads of garlic, cloves peeled) and oil in the saucepan over high low heat. Cook it for about 30-60 minutes, until the garlic is soft, buttery, and creamy.
Step 2
In a medium nonstick skillet, heat butter over medium-high, add paprika and chili flakes, mix and set aside.
Step 3
In a small bowl mix garlic, greek yogurt, lime zest, lemon juice, and lemon zest. Add salt and pepper and mix.
Step 4
Lightly toast the bread.
Step 5
Using a butter knife spread the garlic over the toast.
Step 6
Spread the greek yogurt over toast
Step 7
Top with poached egg, salt, and pepper.
Step 8
Drizzle over the spicy butter
Step 9
Finish with dill
