Brown Butter Baked Mini Donuts

ingredients

  • 23/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 cup buttermilk
  • 1 teaspoon freshly grated nutmeg
  • 8 tablespoons butter
  • 2 eggs
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar

Brown Butter Baked Mini Donuts

Method

  • Step 1

    First, remove the eggs from the fridge and place on the counter to warm slightly. Preheat the oven to 425°F. If using milk + vinegar combo, put together now. Spray a mini donut pan lightly with baking spray.

  • Step 2

    Heat the butter over medium heat in a heavy-bottomed skillet, stirring frequently, until sputtering stops and milk solids are browned, 5-7 minutes. Set aside to cool for a few minutes.

  • Step 3

    Sift together the flour, baking powder, baking soda, salt, and nutmeg in a large bowl. Set aside.

  • Step 4

    In a medium bowl, use a hand mixer to whip cooled browned butter, both sugars, and eggs until very pale and fluffy, about 2 minutes. Fold the egg mixture into the flour mixture until it is shaggy but combined.

  • Step 5

    Add the vanilla extract to the buttermilk and pour into shaggy mixture, stirring until everything is just combined and there are no dry streaks. Spoon batter into a piping bag or zipper bag and fill each section of the pan 2/3 of the way by piping once around, leaving some room for the donuts to expand.

  • Step 6

    Bake for 5 minutes; keep your eye on them. Remove pan from oven and immediately remove donuts to a cooling rack; the bottoms will have more color than the tops. Check one before removing them all in case they need another minute. Repeat with remaining 4 trays.

  • Step 7

    Cool completely while you assemble the glaze, recipe below.

  • Step 8

    Dip cooled donuts into glaze and place glazed side up on a rack to dry. Best eaten the same day but can be stored in an airtight container up to 2 days.

Strawberry Glaze

ingredients

  • 1 cup sifted confectioner's sugar
  • 1/4 cup powdered/ground freeze-dried strawberries
  • 1/3 cup half and half

Method

  • Step 1

    Use a hand mixer to blend together freeze dried strawberry powder, powdered sugar, and half and half until smooth and glossy. Store unused glaze in an airtight container in the fridge up to 1 week.
