Peach Torte
Peach torte with pine nuts. We ate most of the peaches, but there were a few left and they smelled amazing!!! They ended up in there and now the whole house smells amazing 🍑 Recipe adapted from the Plum Torte by Marian Burros in NYT Cooking. -@brat_h_

ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • pinch salt
  • 1 cup sugar
  • 1 stick unsalted butter, softened
  • 2 eggs
  • 1 lemon, zested
  • 5-6 peaches, halved
  • Pine nuts, optional
  • Powdered sugar, for garnish

Method

  • Step 1

    Preheat oven to 350ºF. Sift flour, baking powder and salt together in a medium bowl. In a separate bowl cream together butter and sugar until light and fluffy. Mix dry ingredients into butter. Mix in eggs and lemon zest.

  • Step 2

    Spoon batter into an ungreased 10-inch springform pan. Smooth out the batter. Place peaches, cut side down, on top of the batter. Sprinkle with pine nuts if desired. Bake on middle rack for 40-50 minutes, until toothpick inserted in center comes out clean. Cool on rack in pan for 10 minutes, then remove sides of pan and finish cooling.

    Dust with powdered sugar. Serve warm.
