- 1 cup all-purpose flour
- 1 teaspoon baking powder
- pinch salt
- 1 cup sugar
- 1 stick unsalted butter, softened
- 2 eggs
- 1 lemon, zested
- 5-6 peaches, halved
- Pine nuts, optional
- Powdered sugar, for garnish
Method
Step 1
Preheat oven to 350ºF. Sift flour, baking powder and salt together in a medium bowl. In a separate bowl cream together butter and sugar until light and fluffy. Mix dry ingredients into butter. Mix in eggs and lemon zest.
Step 2
Spoon batter into an ungreased 10-inch springform pan. Smooth out the batter. Place peaches, cut side down, on top of the batter. Sprinkle with pine nuts if desired. Bake on middle rack for 40-50 minutes, until toothpick inserted in center comes out clean. Cool on rack in pan for 10 minutes, then remove sides of pan and finish cooling.
Step 3
Dust with powdered sugar. Serve warm.
