Green Pea And Fennel Soup
RECIPE:<br><br> Olive oil<br> 1 medium size onion,chopped<br> 2 cloves of garlic,chopped<br> 1 small head of fennel,sliced and fronds saved to use as garnish<br> 2-3 cups of peas (fresh or frozen)<br> Chicken stock to cover ( or water if not available, still tastes good)<br> Salt and pepper to taste ( will depend if stock is salted or not)<br> <br> Sauté onions and fennel in olive oil,when soft add garlic and stir till fragrant. Add chicken stock and cook till fennel is soft, then add the peas and cook until soft, but still vibrant green ( doesn't take long). Check for salt and add freshly ground pepper. Using a blender,purée the soup. I like serving it with a dollop of yoghurt,a drizzle of good olive oil and a garnish of peas and fennel fronds.<br><br> It's a very simple recipe, we like it because it tastes like spring.
